Black Bean Pepper Dip

An aesthetically pleasing, full flavored chip dip, wonderfully paired with any meal.

Ingredients
  

  • 2 Red bell peppers
  • 2 Green bell peppers
  • 2 Yellow bell peppers
  • 1 Orange bell pepper
  • 1/2 Red or yellow onion, diced
  • 1/4 cup Cilantro, chopped
  • 1 can Corn, drained
  • 2 cans Black beans, drained 1
  • 1 tsp Minced garlic
  • 6 TBSP Olive oil
  • 7 TBSP Red wine vinegar
  • 1 TBSP Lime juice
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions
 

  • Dice bell peppers and place them in a large mixing bowl.
  • Drain corn and black beans, place them in the large mixing bowl with the bell peppers.
  • Dice onions and add them to the bowl.
  • Chop cilantro, add to the mixing bowl.
  • Add the minced garlic, olive oil, lime juice, red wine vinegar, salt, and pepper to the bowl, then mix it all together really well.
  • Taste it to see if it has enough salt. If it does, cover with a towel and let sit at room temperature for 30 minutes.
  • Serve and enjoy!

Notes

This Black Bean Pepper Dip is great served at parties, as a potluck, as an appetizer, side dish, main dish, or whatever else you would like it to be for.
It is great served over rice or quinoa, with tortilla chips dipped in it, served over tacos, added to eggs, added to salads, and more.
