Banana Oat Pancakes

Ingredients
  

  • 2 bananas
  • 1 egg
  • 1 1/2 cups buttermilk
  • 2 tbsp butter, melted and cooled
  • 2 tbsp sugar
  • 1 1/4 cups all-purpose flour
  • 3/4 cup ground oats (or oat flour)
  • 3/4 tsp salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract

Instructions
 

  • If using oats, blend them in a blender or food processor.
  • Preheat your skillet to 325 degrees, or your stovetop to med/low heat.
  • Place the bananas in a medium sized mixing bowl. Add the egg, and, using a whisk, combine the two, mashing the bananas in the process.
  • Add in the sugar, melted butter, vanilla, cinnamon, baking powder, baking soda, and salt, whisking together well.
  • Add the oat flour, all-purpose flour, and the buttermilk. Whisk to combine, but don't over mix.
  • Let batter rest 5 minutes.
  • Scoop batter onto griddle, using 1/4 cup batter per pancake.
  • Cook for 2 1/2 minutes, then flip pancakes and cook another 2 1/2 minutes.
  • Serve with butter and maple syrup, and enjoy!
