If using oats, blend them in a blender or food processor.
Preheat your skillet to 325 degrees, or your stovetop to med/low heat.
Place the bananas in a medium sized mixing bowl. Add the egg, and, using a whisk, combine the two, mashing the bananas in the process.
Add in the sugar, melted butter, vanilla, cinnamon, baking powder, baking soda, and salt, whisking together well.
Add the oat flour, all-purpose flour, and the buttermilk. Whisk to combine, but don't over mix.
Let batter rest 5 minutes.
Scoop batter onto griddle, using 1/4 cup batter per pancake.
Cook for 2 1/2 minutes, then flip pancakes and cook another 2 1/2 minutes.
Serve with butter and maple syrup, and enjoy!
