Banana Baras

Ingredients
  

  • 4 ripe bananas
  • 2/3 cup honey
  • 1/2 butter, melted
  • 4 eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1 cup chocolate chips (opt.)

Instructions
 

  • Preheat oven to 350 degrees.
  • Oil a baking sheet and set aside.
  • On the stovetop, over low heat, melt butter, then remove from heat and set aside.
  • Place bananas in a medium-sized mixing bowl. Using an electric hand mixer, beat the bananas until they break down into a paste.
  • Add honey and butter, then beat for 30 seconds.
  • Add eggs and vanilla, and beat until eggs are mixed in.
  • In a smaller mixing bowl, add the flour, baking powder, baking soda, ground cinnamon, and salt, mixing together with a fork.
  • Add dry ingredients to the banana mixture, mixing well with the hand mixer.
  • Pour chocolate chips into the batter, use a rubber spatula or spoon to mix in by hand.
  • Pour batter onto the baking sheet and spread out as evenly as possible.
  • Bake bars for 20 minutes, then remove from oven and allow to cool AT LEAST 10 minutes before cutting them.
  • Serve and enjoy!

Notes

Store in refrigerator, in an airtight container.
