The colors of this dip, alone, are enough to make you want it! It’s so aesthetically pleasing. But more than that, the flavors of all the ingredients meld together, to create this wonderful, zingy, surprisingly delicious appetizer.

I love being able to take simple ingredients and turn them into a beauty, and tasty masterpiece. Unfortunately, the kiddos don’t love this one, however, the adults do. Grown ups, this Black Bean Pepper Dip is the snack for you!

It’s a great appetizer or side dish to any meal. We dip scoop-able tortilla chips in ours, and eat it like that as our main course for lunch. It can be served over quinoa or brown rice, as a healthier option, or serve it on tacos, eggs, in wraps, or any other way you can imagine!

What I love about this dip:

I love the colors! Every time I see this dip, I can’t help but be drawn to it.

I love the addition and tangy kick of the lime juice, with the smoothness of the olive oil. A good quality olive oil goes a long way in my book, so if you have a good one, I recommend using it!

I love how customizable this dip is. If you don’t have all the ingredients, substitute them for another. Don’t have green peppers? Add more red, yellow, or orange.

I LOVE cilantro, it makes the perfect edition to this wonderful dish!

What you’ll need:

  • Green bell peppers
  • Red bell peppers
  • Orange bell pepper
  • Yellow bell peppers
  • Canned black beans
  • Canned corn
  • Yellow or red onion
  • Fresh cilantro
  • Minced garlic
  • Lime juice(fresh or bottled)
  • Olive oil
  • Red wine vinegar
  • Salt
  • Pepper

 

On to the recipe!

 

This recipe comes together quickly and easily:

1. Dice all of the bell peppers and place them in a large mixing bowl.

2. Drain corn and black beans, then pour them into the bowl with the diced peppers.

3. Dice onions, put them in the bowl.

4. Chop the cilantro and add it to the bowl.

5. Add the minced garlic, olive oil, lime juice, red wine vinegar, salt, and pepper to the bowl, then mix it all together really well.

6. Taste it to see if it has enough salt, if it does, cover it with a light towel and let it sit at room temperature for 30 minutes. This allow all those ingredients time to come together to create a beautiful symphony of flavors!

Ingredients
  

  • 2 Red bell peppers
  • 2 Green bell peppers
  • 2 Yellow bell peppers
  • 1 Orange bell pepper
  • 1/2 Red or yellow onion, diced
  • 1/4 cup Cilantro, chopped
  • 1 can Corn, drained
  • 2 cans Black beans, drained 1
  • 1 tsp Minced garlic
  • 6 TBSP Olive oil
  • 7 TBSP Red wine vinegar
  • 1 TBSP Lime juice
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions
 

  • Dice bell peppers and place them in a large mixing bowl.
  • Drain corn and black beans, place them in the large mixing bowl with the bell peppers.
  • Dice onions and add them to the bowl.
  • Chop cilantro, add to the mixing bowl.
  • Add the minced garlic, olive oil, lime juice, red wine vinegar, salt, and pepper to the bowl, then mix it all together really well.
  • Taste it to see if it has enough salt. If it does, cover with a towel and let sit at room temperature for 30 minutes.
  • Serve and enjoy!
