What you’ll need:

I cannot say enough good things about the Nutribullet. It is, without a doubt, the most used kitchen appliance I own! I seriously use and abuse this machine. Lol!

Ingredients:

  • Overripe bananas
  • Sugar
  • Egg
  • Buttermilk
  • Butter, melted
  • Pure vanilla extract
  • All-purpose flour
  • Oats (or oat flour)
  • Baking powder
  • Baking soda
  • Salt
  • Ground cinnamon

Steps:

1. If using oats, grind them in a blender or food processer.

2. Preheat your skillet to 325 degrees, or your stovetop to med/low heat. My stovetop was set to 3, but every stove will be different. You may have to play with your settings until you get it right.

3. Place the bananas in a medium sized mixing bowl. Add the egg, and, using a whisk, combine the two, mashing the bananas in the process.

4. Add in the sugar, melted butter, baking powder, baking soda, salt, vanilla, and cinnamon, whisking together well.

5. Add the oat flour, all-purpose flour, and the buttermilk. Whisk to combine, but don’t over mix.

6. Let batter rest 5 minutes.

7. Scoop batter onto griddle(or frying pan/cast iron), using 1/4 cup batter per pancake. Cook 2 1/2 minutes.

8. Flip and cook another 2 1/2 minutes.

9. Serve and enjoy!

*Because these pancakes have bananas in them, they will probably come out darker than other pancakes.
