If not, you should!! They are surprisingly delicious!

 

Keeping with my current eggnog obsession, I have been experimenting with different ways to incorporate the delightful liquid into more recipes. And these eggnog muffins don’t disappoint, especially when eaten warm and slathered in butter!

I’m not normally an eggnog fan, but since having homemade eggnog, I’ve discovered that I actually really enjoy it. Though, only the homemade stuff. The store-bought stuff is still difficult for me to drink a lot of.

If you’re looking for festive snacks this holiday season, give the homemade eggnog a try and make these eggnog muffins with it! They come together quite quickly and easily. My kids absolutely loved these!

 

Ingredients:

  • All-purpose flour
  • White sugar
  • Salt
  • Baking powder
  • Nutmeg
  • Eggnog (Homemade Eggnog, if you have it)
  • Butter
  • Eggs
  • Sour cream
  • Rum extract

Steps:

1. Preheat oven to 400 degrees.

2. In a small mixing bowl, whisk together flour, salt, baking powder, and nutmeg.

3. In a larger mixing bowl, cream butter and sugar together, by hand.

4. Add in eggs, eggnog, sour cream, and rum extract, whisking together well.

5. Using a spoon, incorporate the flour mixture into the eggnog mixture, until just combined.

6. Spray a 12-count muffin tin with cooking spray.

7. Divide batter evenly between the 12 muffin slots.

8. Sprinkle 1/4 tsp white sugar on top of each muffin.

9. Place in oven and bake for 20 minutes.

10. Remove from oven and allow to cool at least 10 minutes.

11. Enjoy!

  • 12-count muffin tin

Ingredients

  • 1/2 cup white sugar +1T for sprinkling on top
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/4 tsp nutmeg
  • 1 cup eggnog
  • 2 eggs
  • 1/2 cup butter, softened
  • 1 tsp rum extract
  • 1/3 cup sour cream

Instructions
 

  • Preheat oven to 400 degrees.
  • In a small mixing bowl, whisk together flour, salt, baking powder, and nutmeg.
  • In a larger mixing bowl, cream butter and sugar together, by hand.
  • Add in eggs, eggnog, sour cream, and rum extract, whisking together well.
  • Using a spoon, incorporate the flour mixture into the eggnog mixture, until just combined.
  • Spray a 12-count muffin tin with cooking spray.
  • Divide batter evenly between the 12 muffin slots.
  • Sprinkle 1/4 tsp white sugar on top of each muffin.
