Apple Blueberry Granola

This Apple Blueberry Granola is a great option for a quick meal. If you’re in a hurry, don’t feel well, or just don’t feel like making breakfast, this granola is a great option!

Whip up a large batch of this granola, store it in the pantry, it’ll be ready for when you need a quick meal or snack!

Granola is such a simple and delightful food. Whether you have it for breakfast, or as a little snack, it makes for a great food to have on hand.

This granola uses a blueberry syrup to flavor the oats, as well as a honey/butter/sugar mixture. The flavors meld together, creating a subtle, yet sweet blueberry flavor. The oats combined with chewy dried apples, earthy nuts, and a hint of cinnamon, makes this granola a flavorful, delicious recipe. It also goes great on parfaits!

 

When I was young, my dad would buy huge boxes of apple blueberry granola. It was my all-time favorite granola, and I ate it every chance I got!

I searched store after store, trying to find a blueberry granola that tasted the same, to no avail. Being unable to find the granola I was after, I decided to try to come up with my own recipe.

This recipe takes me back to my younger years, bringing back many memories. I hope you and your kids enjoy it as much as I do, maybe you’ll even create wonderful memories of your own from it!

Ingredients:

  • Old-fashioned oats
  • Walnuts
  • Pecans
  • Cinnamon
  • Nutmeg
  • Salt
  • Butter
  • Honey
  • Brown sugar
  • Dried apples
  • Dried blueberries (opt.)
  • Fresh or frozen blueberries
  • White sugar

Steps:

1. In a small saucepan, melt butter, honey, and sugar over low heat.

2. Place fresh/frozen blueberries and white sugar into a small saucepan, over medium heat.

3. Mix the sugar in well. When the mixture starts bubbling, turn the heat down to med/low. Mash the blueberries as much as possible.

4. Let simmer about 10 minutes, to thicken slightly, then remove from heat. (I let the butter start to melt during this part of the process.)

5. Using a strainer, strain the blueberry syrup into a bowl or liquid measuring cup. Discard the mashed blueberries.

6. In a large mixing bowl, combine oats, walnuts, pecans, cinnamon, nutmeg, allspice, salt, dried apples, and dried blueberries, mixing well.

7. At this point, preheat the oven to 300 degrees.

8. Pour the butter mixture into the blueberry syrup, mix together well, then pour over the oat mixture, combining all the ingredients really well.

9. Line 2 baking sheets with parchment paper. Spread half of the granola mixture onto each sheet pan. You want the granola to be in a thin layer, to evenly cook all of it.

10. Bake for 20 minutes, stirring every 5 minutes.

11. Remove from oven and let cool completely. This granola comes out soft, and requires the cooling time to set up properly.

Notes:

For this particular batch of Apple Blueberry Granola, my son requested no nuts, claiming he isn’t a fan. I removed all the nuts, replacing them with an additional cup of oats, as well as an additional 1/2 cup of the dried apples. I was also out of dried blueberries this time, so I left them out. This recipe is customizable, and also pretty forgiving.

If you like a crunchier granola, you can cook the granola longer, in 2-3 minute increments, until desired crispness.

Word of caution:

The longer you cook it, the more likely the granola is to having a bitter aftertaste.

  • 6 cups Oats
  • 1 cup Walnuts chopped
