Eggnog Cookies

This cookie recipe is a great one, especially for eggnog lovers! They are light and fluffy, and are packed with that memorable flavor of eggnog.

 

As a kid, eggnog was a special treat. We didn’t get it very often, and LOVED it when we did! These eggnog cookies take me for a walk down memory lane, back to those days when we would get a small cup of eggnog.

I hope these cookies can take you back, the same way they do me. To those cold winter mornings, with holiday tunes playing. All the kids laughing. A certain, cheerful vibe in the air. Ahh. Good times!

Anyway, back to reality! Lol! Give these cookies a try. You and your kiddos will love them!!

 

Ingredients:

  • Butter
  • White sugar
  • Eggs
  • Eggnog (I use homemade)
  • Rum extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Nutmeg
  • Cloves
  • Cinnamon
  • Powdered sugar
  • Vanilla

 

Steps:

1. Preheat the oven to 350 degrees.

2. In a mixing bowl, cream butter and sugar together, mixing by hand. Using a machine will add too much air into the cookies and make them dry out faster.

3. Add in the eggs, eggnog, and rum extract, stirring to incorporate.

4. In a smaller mixing bowl, combine flour, baking soda, salt, nutmeg, cloves, and cinnamon. Whisk together well.

5. Mixing by hand, combine flour mixture with the butter mixture. Be sure to mix well, without over mixing.

6. Place balls of dough, roughly 1.5tbsp in size, on a baking sheet lined with parchment paper.

7. Bake for 11-13 minutes, until the bottom of the cookies are lightly browned.

8. Remove from oven and allow to cool on baking sheet for at least 5 minutes, then move to a cooling rack and allow to cool completely.

9. Once cookies are completely cooled, make the glaze by combining powdered sugar, eggnog, rum extract, and vanilla in a small bowl, stirring with a spoon. If the mixture is too thick or thin, use extra eggnog to thin it or extra powdered sugar to thicken it.

10. Glaze the tops of the cookies using the back of a spoon. Allow the cookies to sit at room temperature until the glaze is fully set.

11. Enjoy!
